Servings: 8 slices

2 cups all-purpose flour
1 tsp baking soda
¼ tsp kosher salt
1 egg
1 cup granulated sugar
½ cup canola oil
2 Tbs buttermilk
½ tsp vanilla extract
3 bananas, mashed
½ cup walnuts (optional)

Place the cut-out parchment paper liner on the bottom of the loaf tin and coat the sides of the pan with butter. Preheat the oven to 325 degrees Fahrenheit.

Combine dry ingredients (flour, baking soda, and salt) in a bowl and set aside.
Mash bananas and set aside.

In a mixer using the paddle attachment, combine the egg, sugar, oil, buttermilk and vanilla.

On low, add the dry ingredients to the wet ingredients and then add the mashed bananas.

Do not over mix; mix until combined.

Pour into 9x5” loaf pan and place on the center rack, bake for 50-75 minutes or until an inserted toothpick comes out clean.

Important Note: When adjusting recipes, be aware that directly scaling ingredient quantities based on the Smart Bake Calculator’s ounce measurements won’t always guarantee the same results. This is especially important for items like cakes and quick breads, which are baked as a single unit. While cookies, cupcakes, muffins, cake pops and other individually portioned goods can be reliably scaled up or down by any number, cakes and other large, single-pan items are trickier. Changes to pan size, baking temperature, and baking time make it more complex than just adjusting ingredient amounts.
