Blueberry Platz

Ingredients

pastry:
•    4 cups flour
•    8 tablespoons granulated sugar
•    6 teaspoons baking powder
•    1 teaspoon salt
•    4 tablespoons shortening
•    2 cup cream
•    2 egg

crumbs:

•    1 1/2 cups granulated sugar
•    1 1/2 cup flour
•    1 teaspoon baking powder
•    4 tablespoons butter
•    4-6 tablespoons cream

Instructions

  1. Prepare the Pastry Dough:
    In a mixing bowl, whisk together the dry ingredients for the pastry base.
  2. Incorporate the Shortening and Liquids:
    Use a pastry blender or a stand mixer fitted with a paddle attachment to cut the shortening into the dry mixture. Add the beaten egg and cream and blend until the dough comes together and holds its shape.
  3. Form the Crust:
    Press and gently stretch the dough into a parchment-lined 9x13-inch baking dish, ensuring it’s evenly distributed.
  4. Add the Fruit:
    Arrange your choice of sliced or chopped fruit—such as apricots, peaches, apples, blueberries, cherry pie filling, or rhubarb—over the crust in an even layer.
  5.  Make the Crumble Topping:
    In a separate bowl, stir together the dry ingredients for the crumb topping. Cut in the butter and cream with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Sprinkle this topping over the fruit.
  6. Bake:
    Place the dish in the top third of the oven and bake at 350°F for about 40–45 minutes, or until the topping is golden brown, the edges begin to brown, and a toothpick inserted into the cake portion comes out clean. The fruit used may affect the bake time depending on how much liquid is in the fruit so keep an eye on it. Allow to cool before slicing and packaging. 


My mother’s side of the family is Mennonite and I grew up eating Platz made with fresh fruit every summer. My grandmother, who past-away in 2023, would either make the Platz with fresh Apricots or Blueberries but you can substitute with any fruit you like. This recipe is very special to me because my grandmother was the one who taught me to bake and I am excited for her gifting to be passed on through my baking business today. 

Important Note: When adjusting recipes, be aware that directly scaling ingredient quantities based on the Smart Bake Calculator’s ounce measurements won’t always guarantee the same results. This is especially important for items like cakes and quick breads, which are baked as a single unit. While cookies, cupcakes, muffins, cake pops and other individually portioned goods can be reliably scaled up or down by any number, cakes and other large, single-pan items are trickier. Changes to pan size, baking temperature, and baking time make it more complex than just adjusting ingredient amounts.
